Looking for the easiest, tastiest, perfect fall treat? This easy fall recipe idea for pumpkin spice cookies uses only three ingredients, making it simple to whip up at a moment’s notice. What makes these cookies so fantastic is just how easy they are to make. All you need is a box of spice cake mix, a can of pumpkin, and a bag of chocolate chips (I prefer dark chocolate chips but any will do). You do not need to add any butter, oil, or eggs, just use the dry packet of spice mix as is.
Mix all three ingredients in a bowl, then use an ice cream scoop to drop the batter onto a parchment lined cookie sheet (I use a mini scoop for slightly smaller cookies). Bake in a preheated oven at 350 degrees for 8-10 minutes.
Because you are using a cake mix, these cookies have more of a soft cake-like consistency. In fact, these would be perfect for making whoopie pies! The batter could also be placed into a bundt cake pan or a couple loaf pans if desired.
I decided that I wanted to make a fun fall-themed teacher gift for my daughter’s teachers so I purchased them each a box cake mix, a can of pumpkin, and a bag of chocolate chips and put the ingredients into a gift bag. Then I printed out the recipe cards and added the card to each bag (would also be cute as a tag with pretty ribbon)…an inexpensive and fun way to spread some autumnal cheer!
