Chocolate Dipped S’mores Sticks Recipe

Happy Memorial Day weekend, everyone! I don’t know about the weather where you are, but here in Maine it’s been rainy and cold for DAYS! Boo! No beach, BBQs, campfires, and other outdoor activities, so improvisations are a must! Today I went to a family ‘cookout’ (or in our case an ‘eat in’) and brought a delicious treat…

Chocolate Dipped Smores Recipe
These are made right in the microwave, so no need for a campfire! 
Here’s what you’ll need:

-Graham crackers
-Marshmallows (I used the special square s’mores marshmallows as pictured below)
-Hershey’s chocolate bars
-Melted chocolate for dipping

Steps to Follow:
1) Break each graham cracker rectangle in half, then break each half in half (you should have four small ‘sticks’ of graham cracker). Honestly, I think breaking the graham crackers apart without unevenly cracking or chipping them was the most difficult part!

2) On one microwavable plate, place four sticks of graham crackers and one rectangle of chocolate bar on each piece (see photo below).

3) On a second microwavable plate, place four sticks of graham crackers. Then take one of your marshmallows and use kitchen scissors or a knife to cut it down into a relatively thin rectangle. I cut the large “s’moremallows” lengthwise into four pieces. If you are using regular marshmallows, you can probably cut them in half length wise. You don’t want your marshmallow to hang over the sides of your graham crackers or to be too thick or it will be a mess when you microwave and try to dip the cracker!

4) Place your chocolate graham cracker plate into the microwave for about 35 seconds until the chocolate is soft, but not completely melted. Take it out of the microwave then put your marshmallow cracker plate into the microwave for about 15 seconds, just long enough for them to puff up. Remove the plate and carefully place a chocolate/graham cracker onto the top of each marshmallow/graham cracker combo. Don’t smush them too hard…you don’t want the marshmallow to ooze beyond the borders of the cracker if you can help it!

5) Place your graham cracker sandwiches on a plate or baking sheet and pop them into the freezer for at least 5 minutes. While they are hardening, melt your dipping chocolate. I used Baker’s Dipping Chocolate that is already in a container and can be found in the baking aisle at the grocery store. Follow directions on the package to melt.

6) Take the graham cracker sandwiches out of the freezer and dip/cover each one about half way. Place onto a plate or baking sheet covered in wax paper and then place in the fridge or freezer to harden the chocolate before serving!  Enjoy!!

We picked the best berries, then went home where my little sous chef practiced her fine motor skills by cutting the strawberries for homemade shortcake- my all time favorite dessert (and quickly becoming C’s favorite, too)! 🍓 

The last couple of months have been super challenging regarding some unexpected health challenges for me, resulting in an emergency surgery 4.5 weeks ago, and getting back to feeling good enough to go on outings like today was at the top of my priority-list! I felt good and had a wonderful time with my best little bud!! 🥰

Also shout out to @browdersfreshpickins for allowing us to pick all along the outside rows so that C could easily use her walker in the field!

💗 This heart garland is easy to make using the printable I created for my Etsy shop @littlecpaperie…just print on card-stock, cut out the hearts, punch some holes, and thread onto some cute string! Make as many garlands as you wish, in any length! 🥰 Now go spread some love! 💗💗💗

We had a small family party while in Maine and I had so much fun putting together all the details! My favorite part of the decor was making the cake toppers to put onto a plain white bakery cake (I also added some fresh strawberries). I printed some strawberries and flowers on card stock and glued them to wood skewers. I made the pennant flags and bunting out of fabric from Joannes and used the same gingham for the table runners. It brings me so much joy to put together a little birthday party for my sweet little girl! Watching her grow and seeing her personality blossom is the greatest privilege of my life…she’s the best thing to ever happen to me! 

And on that note, Happy Birthday, C, and Happy New Year to all of you!
